Veggie Kebabs

A festive vegan main dish that’s perfect for the holidays! These delightful kebabs will be a hit with the entire family. You can also double the recipe and make a fun and colorful variety of kebabs. Some of our favorites:

  • butternut squash (recipe below)

  • grated (raw) beets with riced cauliflower

  • riced broccoli

  • grated (raw) carrots with riced cauliflower

  • shredded sweet potato with riced cauliflower

For whatever veggie combo you pick, just use 1 ½ cups of veggie per box of Adda Veggie.

 

Ingredients:

  • 1 package Adda Veggie Original Blend

  • 1 ½ cups raw shredded butternut squash (coarsely grate whole squash or pulse cubed squash)

  • 1 tablespoon cooking oil

  • 4 kebab skewers

Instructions:

  1. Combine Adda Veggie with shredded butternut squash according to package directions. Refrigerate veggie mixture for 15 minutes.

  2. Preheat oven to 375°F.

  3. Mold veggie mixture onto kebab skewers.

  4. Heat oil in a cast iron skillet over medium-high heat and sear kebabs on all sides until browned.

  5. Transfer skillet into oven and bake for 20 minutes or until kebabs are cooked through.
