Butternut Sage Patties

A classic fall combo we all know and love with an Adda Veggie mealtime twist! This recipe is super simple–hello, 4 ingredients–but the elegant addition of homemade sage oil takes it to the next level. It makes a hearty salad topper or a delicious filling for a pita or bun. Either way, it's perfect when you want ALL the fall feels and tastes in one satisfying, protein-packed meal.

 

Ingredients:

  • 1 package Adda Veggie Original Blend

  • 1 Butternut Squash (or 2 cups cubed)

  • ½ bunch Fresh Sage, coarsely chopped

  • 1½ tsp Dried Sage

  • 1 Tbsp Sage Oil *

* To make Sage Oil: Heat 1 Tbsp olive oil over medium-high. When hot, add 4-6 fresh sage leaves and fry until the sage starts to sizzle. The leftover fried sage can be used as a garnish.

Instructions:

  1. Pre-heat oven to 425°F.

  2. Peel, de-seed and coarsely chop the butternut squash. Then shred the squash in a food processor using the shredding disc attachment. (If shredding by hand you can use the coarse side of a box grater. If using cubed butternut squash, quickly pulse in a blender or food processor).

  3. Prepare full package of Adda Veggie by soaking Protein Crumbles in ½ cup of water for 2 minutes, stirring halfway. Then stir in Adda Mix.

  4. Mix in shredded butternut squash, fresh sage, dried sage and sage oil.

  5. Form four 4"-diameter patties. (Pro tip: cooling prepared mix in the fridge for 30-60 minutes makes patties easier to form!)

  6. Heat oil in a pan over medium-high heat. Once the oil is hot, cook patties for 1-2 minutes per side. Then transfer to oven to bake for 10-15 minutes.

  7. Garnish with fried sage and serve warm.
