Broccoli Lasagna

A delicious classic lasagna dish! The layer of Adda Veggie broccoli crumbles takes on the texture of a ground meat, making this dish as delicious and satisfying as a ground meat lasagna. This one will be a hit with the whole family, with enough leftovers for the next day’s lunch! To make it 100% vegan, just swap out the ricotta and mozzarella with the suggested vegan alternatives.

 

Ingredients:

  • 1 package Adda Veggie Original Blend or Herby Roasted Garlic

  • 2 cups broccoli (roughly 1 medium head)

  • ¼ cup olive oil

  • 1 box lasagna noodles

  • 2 jars tomato sauce

  • 1 lb. tofu ricotta

  • 1 cup shredded vegan mozzarella

  • basil, for garnish (optional)

Instructions:

  1. Preheat oven to 375 degrees F.

  2. Pulse broccoli in a food processor and combine with Adda Veggie according to package directions to make a meatless crumble.

  3. Add 2 tablespoons of oil in a skillet and begin browning broccoli crumbles, breaking up and turning with a spatula. After a few minutes, once browning has begun, add remaining 2 tablespoons of oil and continue cooking several more minutes until the mixture is uniformly browned and crumbly. Remove from heat.

  4. Follow lasagna noodle package instructions to prepare. Spread sauce in the bottom of a lasagna pan. Layer noodles, followed by sauce, ricotta, noodles, sauce, Adda Veggie broccoli crumble, and noodles. Then repeat each layer once more.

  5. Top the lasagna with any additional sauce and mozzarella. 

  6. Cover the pan tightly and bake for 45 minutes. Uncover and bake an additional 10 minutes.
