Mixed Veggie Nuggets

Great for kids! Our veggie nuggets recipe uses a mix of broccoli, cauliflower and sweet potatoes to create a great flavor balance that resembles a crispy, chewy nugget.  Our nuggets are baked – not fried – so they are a really healthy meal or snack. They are also a great way to get your kids to eat their veggies! And for you to get your serving of veggies!

 

Ingredients:

  • 1 package Adda Veggie Original Blend

  • ¾ cup broccoli (roughly ½ head)

  • ¾ cup cauliflower (roughly ½ head)

  • ½ cup sweet potato (roughly ½ of a large sweet potato)

  • 2 tablespoons olive oil

Instructions:

  1. Preheat oven to 375 degrees F.

  2. Steam sweet potato until just barely tender (should not be mushy or too soft).  Remove sweet potato from steamer and let stand in strainer until cool, allowing excess liquid to drip off.

    Tip: If you don't have a steamer, you can cook the sweet potato in a microwave. Simply wrap the potato with saran wrap and microwave on high for 4 minutes.

  3. In a food processor, add broccoli and cauliflower florets and pulse until the consistency is of small crumbles. Remove from food processor and measure 1 ½ cups.

  4. Now place the steamed sweet potato in the food processor and puree.

  5. Hand mix ½ cup of the sweet potato puree, 1 ½ cups of the broccoli-cauliflower crumble and 2 tbsp olive oil.  Make thin, 3-inch Adda Veggie nuggets with the mixture according to package directions (hand-shape into nuggets).

  6. Line a baking sheet with parchment paper and wipe or spray with a thin coating of oil.  Place nuggets evenly spaced on baking sheet. Bake 25 minutes, and flip nuggets (the underside should be golden brown). Bake an additional 10 minutes, remove and let cool for 5 minutes.

  7. Serve with ketchup, BBQ sauce, or the condiment of your choice.
